A wine with an attack of great freshness and enveloping. Follow distinctly acidic notes, which preserve its freshness. It has a good persistence, an excellent gustatory balance and a moderately bitter finish. It goes well with shellfish and in general with all appetizers based on fish. Excellent as an aperitif.

Organoleptic Test

Look
Clear and clean.
Color
Cherry pink.
Perfume
Fresh and fruity. Distinct scents of rose, cherry and strawberry. Excels in the olfactory neatness and in the elegance of the variety.
Taste
Attack is greatly fresh and surrounding. Notes follow remarkably acid, witnesses of an harvest made intentionally ahead of time to preserve freshness and youth. A good persistency and a very fine tasting balance, with a bitterish final.
Pairings
It goes well with shellfish and in general with all appetizers based on fish. Excellent as an aperitif.

Harvest by hand in perforated boxes of KG 15 cad. Destemming and soft pressing. Addition of selected yeasts. Thermocontrolled alcoholic fermentation in the presence of skins for 12 hours. Unscrewing and soft pressing of marcs. Completion of alcoholic fermentation “in white”. Cold tartaric stabilisation during the month of April. Bottling during the spring following the harvest.
